There was a invention a few years ago called a SILPAT.  It really makes production of cookies easier.  It is a non-stick baking mat.  You can drop your sticky cookie dough onto these unprepared sheets and not worry about your cookies being stuck to the pan.  No need to prep the cookie sheet either. They are made of a fiberglass layer that has been encapsulated with silicon.  They can be used over and over and are FDA approved.  We use them in our convection oven and they are good from 40°F to 482°F!  It’s a much nicer alternative to parchment paper or the classic greasing the pan method.  After use give them a nice wipe down with a damp soft sponge. Hang or lay it to dry and store them flat separated by wax paper.  Never try to cut or fold the product. Each unit comes with some instructions which should be read and followed.  We use the full sheets and have a couple making the process go by faster!  You can purchase them in full or half size and they claim that they can be used thousands of times over and over.  The sheets and pans are available locally at Scranton Restaurant Supply in Scranton.
